Scorzonera Long Black Maxima

Scorzonera is very similar to Salsify but has a harder to pronounce name! It has long roots with dark brown to black skins, so it definitely needs deeper soil to grow. The flavour however is considered somewhat superior to Salsify and the growing method practically identical. These have a very subtle oyster taste to them!

Long Black Maxima produces heavy yields of very long roots. It isn't a pretty root crop to look at but nevertheless has an outstanding flavour. This variety does have some resistance to bolting.

To cook, scrape gently with a knife, cut into 10cm lengths and then either steam or boil. Alternatively, pan fry in oil or lemon juice!

In open ground in shallow rows 30cm apart.

When to Transplant

Thin out seedlings as they grow to 15cm apart.

Maturity

Ready for use from early November, either lifted direct or stored in sand throughout the winter. Be careful when lifting and the roots can easily snap.

Handy Tip

The outer black skin should be scraped off and roots should be cooked in similar way to Parsnips.
