Garlic Elephant - 10 Cloves (pips)

Elephant Garlic (Allium ampeloprasum) has a fresh, juicy, mild sweet flavour which makes it ideal for baking and roasting. It's twice the size compared to standard garlic, and each bulb is approx 12.5-15cm (5-6") across. It is not a true member of the garlic family, it is closer to leek, which it bears a close resemblance in flavour.
Elephant garlic produces beautiful purple flowers in late spring, growing up to 1.5m tall, and up to 1kg in weight.

Elephant Garlic can be planted in both autumn and spring, but does better if planted in autumn. Best planted from September to October, and ready to harvest the following June.

Garlic grows best in a sunny site in light, well-drained soil.

You will receive a large bulb, split this into cloves and plant these individually. Plant each clove of garlic elephant upright, with the flat base down and pushed into the soil to twice their own depth at intervals of 15cm. They need very little after care, just nip off the flower bed when it appears and keep the area weed-free. Make sure to water regularly, as dry weather arrives. Add a little general purpose fertilizer in the autumn and a couple of times in the spring.

Elephant Garlic is resistant to most forms of disease.

It is easy for any gardener to grow good garlic. It grows well over most of the UK provided it is grown in a free draining soil, that is not too acid (pH levels should be over 6.7) and kept well watered and weed free.

Softneck versus Hardneck
There are two distinctive types of cultivated garlic. Softneck is easier to grow, has plenty of cloves and stores well. Hardneck produces fewer but larger cloves and because they have a thinner skin have a shorter shelf life. It also produces flower stalks as part of its natural growth.

Cooking Ideas:
Due to it's giant size, it can be roasted whole and used as a dramatic centrepiece at the dinner table.
Elephant garlic can be cooked much the same as standard garlic. Use for garlic butter, in a creamy soup or to add flavour to other dishes.
The scapes can also be cooked.

Garlic Butter

Garlic butter may be best known for making Garlic Bread. But, you will find plenty of other uses for garlic butter. Try it on steaks, chicken, pork and even seafood. You will want to double the size of this recipe. 1 cup of butter or margarine and 8 cloves of garlic. Use more, if you like it strong. 2 Tablespoons chopped parsley (dried or fresh), 2 Tablespoons grated parmesan cheese (optional)
Roast Elephant Garlic Take each unpeeled clove, rub with olive oil and sea salt. Roast on a tray in 170°C oven for about 30 minutes or until soft. Use the puree in any savoury meal.
